Need Buttermilk?

Not many people keep this item on hand but it can make those pancakes or biscuits more flavorful. Here is a substitute I learned about that I always have available.

1 cup buttermilk = 1 cup milk + 1 tbs lemon juice or vinegar

- Then, microwave it for 30 seconds. (Geneve's Tip)

  1. I use this substitution all the time, but the way I learned to do it is to mix the milk and vinegar and then throw it in the microwave for 30 seconds. I've heard since that the heat starts whatever reaction is needed to turn it into buttermilk.

  3. I usually keep my most expired milk around for buttermilk pancakes. If it starts turning into yogurt, though, I throw it out.
